Cinnamon Cashew Date Milk –

This is one of my favorites. For real.

I make it once, and then I’m on a kick and I’m making it for a month straight!

It’s lightly sweet and creamy, with a dash of cinnamon. Totally like a dessert drink. Except there is NO ADDED SUGAR. The sweetness comes only from the dates!

Isn’t that the best when healthy and delicious collide? That’s what I’m all about!

Paired with a banana or piece of toast, its a substantial snack,  and its full of good for you stuff.

The dates boast a high fiber content, and the cashews offer a dose of heart healthy fats, and are high in antioxidants.

Chinese medicine and Ayurveda use Cinnamon to treat things such as colds and indigestion, and to improve energy and circulation.

Cinnamon is also known for possessing anti-inflammatory qualities, and has even been shown to lower bad cholesterol.

I usually drink this cashew milk cold, but its a special treat when you eat it up. Definitely try both!

Yield: 64 ounces


1 1/4 cup cashews*

*(soaked in water 2-4 hrs or un-soaked in Vitamix, or other high speed blender)

8 medjool dates, pitted

6 cups water, divided

1 teaspoon cinnamon

pinch salt


Put the cashews, pitted dates, cinnamon, salt and 2 cups of water into the blender and blend until smooth, about 2 minutes in a high-speed blender, or 4-5 in a standard blender.

*Tip-rub between fingers to test for graininess

Add remaining 6 cups of water and blend until mixed well.

*(add up to 2 more cups of water depending on your taste)

That’s it!  You can also pour it on your hot cereal, or use it in your shakes and smoothies. If you like it thinner add more water. But I like it just as is. Yum!

*Note: To soak the cashews, place them in a medium bowl and cover with hot water. Allow to soak for 2-4 hours. Drain and rinse until water runs clear.
